Ingredients
- 1 pkg. active dry yeast
- 1/2 c. warm water
- 1 c. lukewarm mashed potatoes
- 2/3 c. vegetable shortening
- 2 eggs
- 2/3 c. sugar
- 1 1/2 tsp. salt
- 6 to 7 c. flour
Directions

1Dissolve yeast in warm water in large bowl.

2Stir in potatoes, sugar, shortening, eggs, salt and 3 cups of the flour.

3Beat until smooth.

4Mix in rest of flour to make dough easy to handle.

5Knead until smooth and elastic, about 5 minutes.

6Place in greased bowl and cover tightly.

7Refrigerate at least 8 hours but no longer than 5 days.

8Punch dough down.

9Form into rolls and let rise. Bake at 350° for 25 to 30 minutes.
