  • 2 c. white sugar
  • pinch of salt
  • 1/2 c. oil
  • 1 large egg
  • 1 c. sour milk (1 Tbsp. vinegar in milk)
  • 1 tsp. baking soda (stir into milk)
  • 1 tsp. vanilla
  • 2 c. flour
  • 2 c. diced rhubarb

Directions

    Mix all ingredients except rhubarb.

    Mix a little flour in rhubarb, then fold in cake batter.

    Pour in 9 x 13-inch loaf or oblong pan; sprinkle top with 1/2 cup brown sugar and 1 teaspoon cinnamon, mixed together.

    Nuts are optional.

    Bake at 350° for about 50 minutes, until done.
