- 1/4 c. chopped onion
- 1/4 c. chopped green pepper
- 1/4 c. chopped red pepper
- 1/4 c. chopped celery
- 1 Tbsp. vegetable oil
- 1 c. chicken broth
- 1/2 c. water
- 1/2 tsp. leaf oregano
- 1/8 tsp. pepper
- 1/2 c. uncooked long grain white rice
Directions

1Saute onion, green and red pepper and celery in oil in a small saucepan, stirring, about 4 minutes until vegetables are softened. Stir in broth, water, oregano and pepper.

2Bring to boil.

3Stir in rice.

4Lower heat and simmer, covered,

5for 25 minutes, or until rice is fork-tender.
