Ingredients
- 3 small squirrels
- 3/4 c. cooking oil
- 1/4 c. lemon juice
- 2 c. bread crumbs
- 1/2 c. milk or cream
- 1/8 tsp. pepper
- 1 c sliced mushrooms
- 1/2 tsp. salt
- 1/2 tsp. onion juice
- 4 Tbsp. olive oil, bacon or fat
Directions

1Dress and clean squirrels.

2Wash in several waters.

3Cover with cooking oil mixed with lemon juice; let stand for 1 hour.

4Combine crumbs with enough milk to moisten mushrooms, salt, pepper and onion juice.

5Stuff squirrels with mixture; sew and truss.

6Place in roaster; baste with olive oil or bacon fat.

7Roast, uncovered, at 325° until tender for 1 1/2 to 1 3/4 hours.

8Baste every 15 minutes with fat.

9Serves 6.
