- 2 lbs beets, raw
- 1 large onion
- 1 tablespoon olive oil
- 2 teaspoons coarse salt
- 1/2 teaspoon black pepper
- 2 tablespoons balsamic vinegar
Directions

1Peel the beets and cut into 1/2 inch cubes.
