  • 16 small red-skinned potatoes, scrubbed (1 1/2 to 2-inch diameter)
  • 1/3 c. Parmesan cheese
  • 1/3 c. plain low-fat yogurt
  • 2 Tbsp. minced green onion or chives
  • paprika

Directions

    Pierce potatoes several times with fork.

    Arrange in single layer in shallow baking dish.

    Bake in 375° oven until tender (about 1 hour).

    If desired, you may cover and refrigerate for next day serving.
