Salmon Cucumber Cups

  • 3 English cucumbers
  • 2 cups boursin cheese
  • 13 lb smoked salmon, cut into thin strips (1/2 inch long)

    Slice cucumbers into 1/2 inch rounds.

    With a melon baller, scoop out the center of each round, leaving bottom intact, to make shallow cups.

    Using a pastry bag or spoon, fill cucumber cavities with cheese and top each with a strip of salmon.
