Sausage Casserole

Ingredients
- 1 (16 oz.) can smoked sausage
- 3/4 c. diced celery
- 3/4 c. diced bell pepper
- 1 (8 oz.) box fresh mushrooms
- 1/2 c. chopped onion
- 3 medium to large potatoes
Directions

1Cut sausage into 1/4-inch rounds and place in bottom of large skillet or Dutch oven.

2Wash and slice mushrooms and place on top of sausage.

3Add celery, bell pepper and onion and saute lightly. Cut potatoes into large, diced pieces and place on top of other ingredients.

4Salt and pepper to taste.

5Cover and simmer until potatoes are done.

6This will usually cook in its own juice from the sausage; should it need liquid, add 1/2 cup of water.

7Serves 6.
