Ingredients
- 2 lb. stewing beef (1-inch cubes)
- 1 1/2 c. chopped onion
- 3 Tbsp. quick cooking tapioca
- 1/2 c. celery, sliced
- 1 bay leaf
- 2 1/2 tsp. salt
- 6 carrots, sliced
- 1/4 c. oil
- 1 (18 oz.) can tomatoes
- 1 (10 oz.) can beef broth
- 1 clove garlic, minced
- 1 Tbsp. parsley flakes
- 1/4 tsp. pepper
- 3 medium potatoes, diced
Directions

1Brown beef cubes on all sides in oil.

2Bring onion, tomatoes, beef broth, garlic, parsley, salt, pepper, bay leaf and tapioca to a boil; place beef cubes in 3-quart casserole.

3Pour above mixture over beef.

4Cover; bake in 350° oven for 1 1/2 hours.

5Add carrots, potatoes and celery; continue baking 1 hour or until vegetables are tender.

6Serves 6 to 8.
