- 1 medium eggplant, peeled
- 3 medium onions, chopped
- 2 eggs, beaten
- 1 c. bread crumbs
- 1/2 c. grated Cheddar cheese
- 2 Tbsp. butter
- 1 tsp. salt
Directions

1Cut eggplant in cubes.

2Cook eggplant and onions together in water for 20 minutes.

3Drain thoroughly.

4Add eggs, butter, bread crumbs, cheese and salt.

5Mix well.

6Place in greased 9 x 13-inch baking dish.

7Bake in a 325° oven for about 1 hour or until done.
