- 3/4 c. oil
- 1 c. flour
- 1 bunch celery
- 4 large onions
- 3 bunches green onions, chopped
- 1 bell pepper, chopped
- 1 pt. cut okra
- 3 pods garlic, chopped
- 6 qt. chicken stock
- 1 can tomato paste
- 1 can tomatoes
- 1 small bottle Worcestershire sauce
- 1 tsp. hot sauce
- 1 bay leaf
- dash of thyme
- salt to taste
- 2 lb. shrimp, peeled and deveined
Directions

1Make roux with oil and flour, stirring constantly until dark brown.

2Add celery, onions, bell pepper and garlic to roux and cook until tender.

3Add roux and vegetables to stock and add okra. Add remaining ingredients and simmer.

4Add shrimp about 10 minutes before serving.

5Serve hot over rice.

6Add gumbo file.
