Shrimp Casserole

Ingredients

  • 2 c. raw rice
  • 2 to 3 lb. shrimp, shelled and deveined
  • 1 large bell pepper
  • 1 large onion
  • 1 (4 oz.) can sliced mushrooms, drained
  • 1 (16 oz.) bottle Thousand Island dressing
  • 6 to 8 slices raw bacon

Directions

    Cook rice and set aside.

    Chop onion and bell pepper.

    Saute in a small amount of drippings until cooked.

    Combine cooked rice, shrimp, onion, bell pepper and the can of mushrooms in a large rectangular greased 9 x 13-inch casserole.

    Stir in bottle of Thousand Island dressing.

    Cover with strips of raw bacon.

    Cook at 350° for 1 hour, uncovered.

    Fluff with fork.
