- 2 c. raw rice
- 2 to 3 lb. shrimp, shelled and deveined
- 1 large bell pepper
- 1 large onion
- 1 (4 oz.) can sliced mushrooms, drained
- 1 (16 oz.) bottle Thousand Island dressing
- 6 to 8 slices raw bacon
Directions

1Cook rice and set aside.

2Chop onion and bell pepper.

3Saute in a small amount of drippings until cooked.

4Combine cooked rice, shrimp, onion, bell pepper and the can of mushrooms in a large rectangular greased 9 x 13-inch casserole.

5Stir in bottle of Thousand Island dressing.

6Cover with strips of raw bacon.

7Cook at 350° for 1 hour, uncovered.

8Fluff with fork.
