  • 8 large eggs, lightly beaten
  • 3/4 teaspoon fine salt
  • 4 tablespoons olive oil
  • 1 1/4 cups medium-sized cooked shrimps
  • 1/2 an onion, thinly sliced
  • 3/4 teaspoon curry powder
  • 3 tablespoons coriander leaves (cilantro), finely chopped
  • Garnish (Optional)
  • butter lettuce
  • sliced roma tomatoes
  • sliced cucumbers
