Sicilian Tomato Jam

- 2 pounds Cherry Tomatoes
- 1 pound Granulated Sugar
- 1/4 cups Lemon Juice
- 1/4 cups Fresh Basil, Chopped
- 1 whole Hot Red Chile Pepper, Finely Chopped
Directions

1Heat the oven to 325 degrees F. Slice the tomatoes in half and place on aluminum foil covered baking sheets. Bake for about 30 minutes or until the tomatoes have begin to soften. Allow to cool and then carefully slip off their skins.

2Place the tomatoes in a heavy saucepan with the sugar and bring to a boil. Continue at a rapid boil for about 7 to 8 minutes. Remove from heat and stir in lemon juice, basil, and chopped pepper. Store in sterile jars in the refrigerator until ready to use.
