  • 2 tablespoons butter
  • 12 onion, chopped
  • 3 stalks celery, chopped
  • 4 potatoes, diced
  • 2 tablespoons all-purpose flour
  • 2 cups half-and-half
  • 1 cup milk
  • 2 cups cooked chicken meat, diced
  • 16 ounces frozen whole kernel corn
  • 1 teaspoon salt
  • 12 teaspoon pepper
  • 14 teaspoon chili pepper flakes (optional)
  • 1 (15 ounce) can creamed corn

Directions

    Boil potatoes until soft.

    Peel and dice.

    Set aside.

    Melt butter in a soup pot or dutch oven over medium heat.

    Add onion and celery, cook for 3 minutes or until tender, stirring frequently.
