- 9 carrots, quartered and cut into 2-inch lengths
- 1 tablespoon sugar
- 2 tablespoons butter
- 1/2 teaspoon coarse salt
- a large pinch of ground cinnamon
- Fresh ground pepper
Directions

1In a skillet bring the carrots, sugar, butter, salt, and 1/2 a cup of water to a boil. Add the cinnamon and stir. Reduce heat; simmer, partly covered, 6 minutes.

2Cook uncovered, over high heat, tossing often until tender, 3 to 4 minutes. Transfer to a bowl. Season with pepper.
