  • 1 bag frozen spinach
  • 2 Tbsp. chopped onion
  • 2 c. grated Parmesan cheese
  • 1 c. sour cream
  • 1/2 tsp. pepper
  • 2 Tbsp. flour
  • 2 Tbsp. butter
  • 4 eggs
  • 1 tsp. salt

Directions

    Cook spinach and onion in small amount of water until thawed. Drain.

    Beat eggs slightly and mix with other ingredients.

    Stir spinach and onion into mixture.

    Bake in greased 2 1/2-quart casserole at 350° for 40 to 45 minutes or until set.

    Do not overcook as casserole will separate.
