13 steps

Ingredients

  • 75 grams dry spaghetti
  • 2 eggs, lightly beaten in a good sized bowl
  • 1/4 cup broccoli stalks, peeled and sliced a quater inch thick
  • 1 cup small broccoli florets
  • 1 small garlic clove, desprouted and crushed
  • 1/2 cup brie, cut into half inch cubes
  • 1 squeeze lemon juice
  • 1 small grating of nutmeg (optional)
  • 1 salt and black pepper
  • 1 tbsp extra virgin olive oil

Directions

  1. 1
Put on a pot of boiling salted water to cook the spaghetti and a steamer to cook the broccoli (if you have a steamer that fits on your spaghetti pan, use that!)
  2. 2
    Light the broiler/grill to high.
  3. 3
    Prepare your ingredients
  4. 4
Put on your spaghetti to cook
  5. 5
Put the broccoli stalks in the steamer and steam for 4 minutes, then add the florets at steam for 4 more minutes
  6. 6
Heat oil on low in a small non stick omlette pan and gently begin to cook the garlic in it
  7. 7
Drain the spaghetti and put in with the eggs in the bowl
  8. 8
Squeeze lemon over the steamed broccoli, and put that in the bowl, followed by the brie, salt and pepper
  9. 9
Mix everything in the bowl, then turn up the heat under the omlette pan and tip your mix in, flattening it and getting it evenly distributed with a wooden spoon or spatula
  10. 10
Cook over medium heat for 10 minutes, until browning underneath and set in the middle
  11. 11
Put under the grill/broiler for a further 5 minutes
  12. 12
Gently loosen the edges with a spatula (avoid using metal on a non stick pan) and turn over onto a plate, give the bottom of the pan a good tap if it doesn't come out straight away
  13. 13
Allow to set for a minute or two before cutting into quarters to serve.
