Spanish Omelette

- 2 Tbsp. oil
- 1 onion, peeled and chopped
- 1 carrot, scraped and coarsely grated
- 1 small green pepper, chopped
- 1/2 lb. zucchini, diced
- 1/2 garlic clove, crushed
- 4 eggs, beaten
- salt and black pepper
Directions

1Heat oil in a nonstick frying pan and saute onion, carrot and green pepper, uncovered, for 5 minutes.

2Add zucchini and cook for another 5 minutes.

3Add garlic and eggs to the vegetables and season with salt and pepper.

4Stir gently until the omelette starts to set.

5When the omelette is set underneath, put it under the broiler to set the top.

6Do not let it get too firm or it will be rubbery.

7Cut the omelette in 1/2 and serve immediately.
