Spanish Rice

  • 1 c. long grain white rice
  • 2 c. water
  • 1/2 c. tomato sauce
  • 1/4 c. chopped onion
  • 1/4 c. chopped celery
  • 2 Tbsp. oil
  • 1/2 tsp. ground cumin
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/4 c. chopped bell pepper

Directions

    In oil on heavy skillet over medium heat, saute rice until lightly brown; stir often.

    Add onion, celery and pepper and saute 1 minute.

    Add remaining ingredients and simmer (over low heat), covered, 15 minutes.

    If it appears a little dry, add 1/4 cup water and simmer 3 minutes longer.

    Turn off fire and let stand, covered, 5 to 10 minutes before serving.

    Serves 6 to 8.
