- 1 c. long grain white rice
- 2 c. water
- 1/2 c. tomato sauce
- 1/4 c. chopped onion
- 1/4 c. chopped celery
- 2 Tbsp. oil
- 1/2 tsp. ground cumin
- 1/2 tsp. garlic powder
- 1/2 tsp. salt
- 1/4 c. chopped bell pepper
Directions

1In oil on heavy skillet over medium heat, saute rice until lightly brown; stir often.

2Add onion, celery and pepper and saute 1 minute.

3Add remaining ingredients and simmer (over low heat), covered, 15 minutes.

4If it appears a little dry, add 1/4 cup water and simmer 3 minutes longer.

5Turn off fire and let stand, covered, 5 to 10 minutes before serving.

6Serves 6 to 8.
