- 3 Tbsp. bacon fat or oil
- 1/3 c. onion, chopped
- 1 c. bell pepper, chopped
- 1 can or fresh tomatoes
- 1 tsp. chili powder
- 1 c. uncooked white rice
Directions

1Saute onion and bell pepper in oil until clear in medium size skillet.

2Add tomatoes and 2 cups water, rice and chili powder. Bring to boil; reduce heat and simmer until rice is done, about 20 minutes.

3Serve with pork or beef.
