Spanish Rice

  • 3 Tbsp. bacon fat or oil
  • 1/3 c. onion, chopped
  • 1 c. bell pepper, chopped
  • 1 can or fresh tomatoes
  • 1 tsp. chili powder
  • 1 c. uncooked white rice

Directions

    Saute onion and bell pepper in oil until clear in medium size skillet.

    Add tomatoes and 2 cups water, rice and chili powder. Bring to boil; reduce heat and simmer until rice is done, about 20 minutes.

    Serve with pork or beef.
