Spanish Rice

  • 2 Tbsp. margarine
  • 1 1/4 c. onions, chopped
  • 3/4 c. green pepper, chopped
  • 1 lb. ground beef
  • 1 (16 oz.) can tomatoes
  • 2 1/2 tsp. sugar (if needed)
  • 1 1/2 tsp. salt
  • 2 c. regular long grain rice
  • 1/2 c. shredded cheese
  • 2 (8 oz.) cans tomato sauce

Directions

    Saute onions and bell pepper in margarine.

    Brown ground beef in another pan.

    Combine tomato sauce, onion and bell pepper. Salt and sugar (if needed).

    Add raw rice; simmer a few minutes. Add ground beef and bring to a rolling boil.

    Lower heat and cook until rice is tender.

    Fluff with fork and add shredded cheese. Cover a few minutes and let cheese melt.
