  • 6 cups Cooked rice
  • 1/2 pound Onion
  • 1 envelope Sazon
  • 1/2 teaspoon saffron
  • 2 teaspoons Smoked Paprika
  • 1/2 cup Crushed tomatoes (I used Italian roasted)
  • 4 tablespoons Olive oil
  • 2 cloves Garlic

    1. Chop onion and cook in a large chef's pan in 2-3 tablespoons oil until tender and golden

    2. Add rice and stir, cook until beginning to be fried.

    3. Make a sofrito with remaining ingredients.

    4. Scrape aside a spot in the middle of the rice, add remainder of olive oil and sofrito and cook until it's hot and garlic is cooked.

    5. Mix the whole thing together. Taste for seasoning and color and serve.
