- 3 c. unsalted nuts (pecans)
- 1 egg white
- 1 Tbsp. orange juice
- 2/3 c. sugar
- 1 Tbsp. grated orange rind
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/2 tsp. allspice
- 1/4 tsp. salt
Directions

1Heat oven to 275°.

2Place nuts in a large bowl and set aside. In small bowl, beat egg whites, juice, sugar, rind, cinnamon, ginger, allspice and salt.

3When well mixed, pour over nuts and toss until thoroughly coated.

4In a large shallow pan, spread nuts in a single layer so they do not touch.

5Bake, stirring every 15 minutes, until nuts are lightly browned and crispy, 45 to 55 minutes.

6Cool completely and store in an airtight container. Makes about 5 cups.
