  • 4 cups prunes
  • 1 7/8 cups tea cold steeped
  • 2 9/16 cups white wine vinegar
  • 2 1/4 cups sugar caster
  • 1 cinnamon stick
  • 1 teaspoon cloves
  • 10 allspice berries

    In a large bowl, cover prunes with tea and let stand 12 hours.

    In a large saucepan cook prunes and liquid over low heat for 15-20 minutes until prunes are plump.

    In a large saucepan, bring vinegar, sugar and spices to the boil. Reduce heat and simmer 5 minutes. Add prunes and liquid and simmer 5 minutes. Using a slotted spoon, pack hot prunes into hot jars and pour over hot syrup.
