Spinach Cheese Pie

- 2 (10 oz.) pkg. frozen chopped spinach, fully drained
- 6 eggs
- 1 lb. Mozzarella, grated
- 1 lb. Ricotta
- 1 lb. hot Italian sausage, browned and dried
- seasonings: garlic, ground pepper and salt
- 1 egg yolk, combined with water (for basting)
Directions

1Combine ingredients.

2Put in pie crust shell (Pillsbury preformed sheets are excellent for the top; deep dish shell for bottom).

3Prepare crust top with design of choice (we make leaves with trimmings), being sure to cut out a center hole and other cuts for steam release.

4Baste the entire shell top with egg yolk.

5Bake at 350° for 1 hour (plus 15 minutes, depending upon oven temperature).

6Rebaste after 45 minutes.

7Serve cool.

8Yields 12 average servings.
