Spinach Cheese Pie

  • 2 (10 oz.) pkg. frozen chopped spinach, fully drained
  • 6 eggs
  • 1 lb. Mozzarella, grated
  • 1 lb. Ricotta
  • 1 lb. hot Italian sausage, browned and dried
  • seasonings: garlic, ground pepper and salt
  • 1 egg yolk, combined with water (for basting)

    Combine ingredients.

    Put in pie crust shell (Pillsbury preformed sheets are excellent for the top; deep dish shell for bottom).

    Prepare crust top with design of choice (we make leaves with trimmings), being sure to cut out a center hole and other cuts for steam release.

    Baste the entire shell top with egg yolk.

    Bake at 350° for 1 hour (plus 15 minutes, depending upon oven temperature).

    Rebaste after 45 minutes.

    Serve cool.
