Spinach Raita

Ingredients

  • 1 T. oil
  • 1 t. ground cumin
  • 1 t. ginger
  • 1 t. green chile
  • 1/4 c. unsweetened coconut
  • 1 large bunch of spinach (or bag of baby spinach)
  • 1/2 c. plain yogurt

Directions

    1. Heat oil in pan

    2. Add cumin, ginger, chile and coconut. Saute until aromatic.

    3. Add spinach and cook until wilted. Stir in yogurt.

    4. Take pan off heat and blend mixture until smooth (either in a blender or with an immersion blender).
