Ingredients
- 1 lb. dried peas
- 2 qt. water
- 1 ham bone
- 1 cup celery, chopped
- 1/4 cup onion, chopped
- 1/2 cup carrots, diced
- 1 bay leaf
- 1/4 tsp. thyme
- Salt and pepper, to taste
Directions

1Wash and sort peas; add water.

2Bring to boiling; simmer 2 minutes.

3Remove from heat; cover and let stand 1 hour.

4Add ham bone.

5vegetables, bay leaf and thyme.

6Heat to boiling.

7Reduce heat and simmer, covered, 2-1/2 to 3 hours or until peas are soft.

8Remove bone; cut off meat and dice.

9If desired, put vegetable mixture through a food mill, blender or sieve.

10Return meat to soup; season to taste with salt and pepper.
