  • 12 tablespoon olive oil
  • 12 cup chopped onion
  • 12 cup grated carrot
  • 2 garlic cloves
  • 1 cup split peas
  • 32 ounces vegetable stock
  • 1 bay leaf
  • 2 cups water (or more as needed)
  • 2 tablespoons low-fat sour cream
  • 4 ounces cooked ham, chopped
  • salt
  • pepper

    Sautee onion, garlic, and carrot in oil.

    Add stock and 2 cups water.

    Add split peas and bayleaf.

    Bring to a low boil.

    Reduce heat to medium-low.

    Let simmer for one hour or until peas are soft.

    Use a rotary blender (boat motor), blender, or food processor until smooth (add water to thin if too thick).

    Stir in ham, sourcream, and season to taste.
