- 1 yellow squash, approximately 1 lb.
- 1 Tbsp. vegetable oil
- 3 small yellow onions, thinly sliced
- 1/2 tsp. oregano
- 1/2 c. vegetable broth or water
- 1/2 tsp. salt
Directions

1Cut squash into 2-inch pieces.

2Heat the oil in a 2-quart saucepan.

3Add the onions.

4Saute until transparent.

5Add the squash and oregano.

6Saute for another 2 to 3 minutes.

7Add the broth or water and salt.

8Reduce heat.

9Cover and cook for 25 minutes.
