- 1 1/2 lb. cooked squash
- 1 small jar (4 oz.) pimento
- 1 small onion, chopped
- 1 pkg. Pepperidge Farm corn bread stuffing
- 1 c. sour cream
- 1 can cream of chicken soup
- 1 stick melted butter
- 2 medium carrots, grated
Directions

1Drain squash.

2Add vegetables, sour cream and soup.

3Mix well. In serving dish, mix stuffing and butter.

4Line bottom with stuffing, reserving enough to sprinkle on top.

5Add squash mixture and top with remaining stuffing.

6Bake in oven at 350° for 30 to 40 minutes.
