Squash Casserole

Ingredients

  • 4-5 medium to large yellow squash
  • 1 c. onion, chopped
  • 1 c. cracker crumbs, crushed
  • 1 stick margarine
  • 2 c. reduced fat sharp cheddar cheese, grated
  • 2/3 c. (small can) evaporated milk
  • 3 eggs
  • 1 tsp. sugar
  • Salt and pepper to taste
  • 1 c. potato chips, crushed

Directions

    Cook squash and drain. Beat eggs, slightly.

    Mix all ingredients together, except potato chips. Place into a 9 inch x 13 inch pan that has been sprayed with a vegetable spray. Top with potato chips. Bake at 350° about 30 minutes.
