Squash Casserole 2

Ingredients

  • 2 to 3 c. cooked squash
  • 1 egg, slightly beaten
  • 1/2 stick margarine, sliced
  • 1/2 c. mayonnaise
  • 1 Tbsp. sugar
  • 1 c. grated Cheddar cheese, divided
  • 1 to 1 1/2 c. cracker crumbs, divided
  • dash of cayenne pepper
  • salt and pepper
  • herbs (optional)

Directions

    Put well drained, hot squash in large mixing bowl.

    Add egg, margarine, mayonnaise, sugar, half of cheese and half of cracker crumbs.

    Season with cayenne pepper, salt, pepper and herbs (oregano is especially good in this dish).

    Mix all ingredients well.

    Put into buttered 1 1/2-quart casserole and top with remaining cheese and crumbs.

    Bake at 350° for 20 minutes. Crookneck squash or a mixture of crookneck and zucchini may be used.
