Squash Casserole

Ingredients

  • 8 to 10 small squash
  • 1 small onion
  • 2 eggs, beaten
  • 2 chicken bouillon cubes
  • 4 oz. sharp Cheddar cheese
  • bread crumbs

Directions

    Boil squash in covered saucepan until soft.

    Drain and save liquid, then mash squash.

    Dissolve bouillon in 1/2 cup of squash liquid.

    Saute onion in butter until clear.

    Add onion, bouillon and 2 ounces of cheese to squash.

    Cool.

    Beat eggs and fold into squash mixture.

    Pour into buttered casserole and top with remaining cheese.

    Bake in 350° oven for 30 minutes.

    Sprinkle with crumbs and return to oven for 15 minutes.
