- 8 to 10 small squash
- 1 small onion
- 2 eggs, beaten
- 2 chicken bouillon cubes
- 4 oz. sharp Cheddar cheese
- bread crumbs
Directions

1Boil squash in covered saucepan until soft.

2Drain and save liquid, then mash squash.

3Dissolve bouillon in 1/2 cup of squash liquid.

4Saute onion in butter until clear.

5Add onion, bouillon and 2 ounces of cheese to squash.

6Cool.

7Beat eggs and fold into squash mixture.

8Pour into buttered casserole and top with remaining cheese.

9Bake in 350° oven for 30 minutes.

10Sprinkle with crumbs and return to oven for 15 minutes.
