Squash Casserole

Ingredients

  • 1 lb. yellow squash, cut into 1/4-inch slices
  • 2 Tbsp. oil
  • 1/2 c. mayonnaise
  • 1 egg, beaten
  • 1/2 c. chopped onion
  • 1/2 c. shredded Cheddar cheese
  • 2 Tbsp. margarine, melted
  • 1/2 c. potato chips, crushed

Directions

    Heat oil in skillet.

    Add squash and saute for 5 minutes or until tender.

    Remove from heat and set aside.

    Combine all ingredients, except potato chips and mix well.

    Pour over squash. Pour mixture into greased 1 1/2-quart casserole.

    Top with crushed potato chips.

    Bake at 350° for 30 minutes.
