- 6 to 10 yellow squash, grated
- 1 medium onion
- 1 1/2 Tbsp. salt
- 1 c. self-rising flour
- 1/2 c. cornmeal
- black pepper to taste
- 1 egg
- 1 c. grated Cheddar cheese (optional)
Directions

1Place squash in colander and sprinkle with salt; let set over sink until all moisture is gone.

2Add flour, cornmeal, black pepper, cheese and egg.

3Mix together.

4Form into patties and fry. Makes 8 servings.
