Ingredients

  • 2 c. yellow squash
  • 3 eggs, slightly beaten
  • 2 c. granulated sugar
  • 1/2 tsp. salt (scant)
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 1/2 c. evaporated milk

Directions

    Cook squash and drain well. Blend in blender until smooth. Set aside.

    Beat eggs slightly.

    Combine with other ingredients, including squash.

    Mix well and pour into unbaked pie shell. Bake at 450° for 10 minutes.

    Reduce heat to 350° and bake another 40 to 45 minutes or until a knife inserted in center comes out clean.
