  • 1 1/2 c. mashed cooked winter squash
  • 2 Tbsp. butter
  • 1 Tbsp. brown sugar
  • 1/4 tsp. salt
  • 1/4 tsp. grated orange peel
  • dash of pepper
  • 2 egg yolks
  • 2 egg whites

Directions

    In large mixing bowl, combine squash, butter, brown sugar, salt, pepper and orange peel.

    Beat until fluffy.

    Add egg yolks; beat well.

    Beat egg whites until stiff peaks form.

    Carefully fold into squash mixture.

    Bake souffle in 350° oven for 30 minutes to 45 minutes.

    Makes 4 to 6 servings.
