  • 1 head broccoli florets
  • 2 carrots, cut in 1 1/2-inch shoestrings
  • 1 medium onion, sliced
  • 1 medium zucchini, sliced in halves
  • 1 medium bell pepper
  • 8 mushrooms, sliced
  • 2 small yellow squash
  • 2 Tbsp. soy sauce
  • 2 c. chicken breast
  • 2 Tbsp. margarine
  • salt and pepper

    Bone chicken breast.

    Cut in slivers.

    Saute in margarine; set aside.

    Wash and cut vegetables; stir-fry in remaining fat until crisp.

    Add salt, pepper and soy sauce.

    Serve with rice or potatoes; cut recipe in half for small group or serve as a salad next day.
