- 2 carrots, cut in 1 1/2-inch shoestrings
- 1 medium onion, sliced
- 1 medium zucchini, sliced in halves
- 1 medium bell pepper
- 8 mushrooms, sliced
- 2 small yellow squash
- 2 Tbsp. soy sauce
- 2 c. chicken breast
- 2 Tbsp. margarine
- salt and pepper
Directions

1Bone chicken breast.

2Cut in slivers.

3Saute in margarine; set aside.

4Wash and cut vegetables; stir-fry in remaining fat until crisp.

5Add salt, pepper and soy sauce.

6Serve with rice or potatoes; cut recipe in half for small group or serve as a salad next day.
