Stuffed Fresh Ham

  • 1 fresh (13 to 18 lb.) ham with a pocket for stuffing
  • 4 to 16 links Italian sausage

Directions

    Put ham into a roasting pan and surround with water.

    Cook in a 400° oven for about 2 hours.

    Remove.

    Strip sausage meat from casings and stuff pocket of ham with sausage meat.

    Add more water to pan, if needed.

    Return to oven until ham is cooked, about 1 hour longer or until meat is no longer pink.

    When ham is done, drain off juice from pan and put into a can or pot.

    Place in refrigerator for 1/2 hour.

    Remove the fat that has risen to the top.

    Use juice to make pork gravy.
