Stuffed Manicotti Shells

  • 1 (8 oz.) pkg. manicotti shells
  • 1 small onion, chopped (1/4 c.)
  • 1 pkg. frozen chopped spinach, thawed and drained
  • 1 Tbsp. instant chicken bouillon
  • 1/2 tsp. garlic powder
  • 1/8 tsp. dried thyme leaves
  • 1 1/2 c. creamed cottage cheese
  • 2 eggs
  • 1/4 c. grated Parmesan cheese
  • 8 oz. tomato sauce
  • 1 c. shredded Mozzarella cheese

Directions

    Cook manicotti shells according to directions; drain.

    Mix onion, spinach, bouillon, garlic powder, thyme, cottage cheese, eggs and Parmesan.

    Fill shells with mixture; arrange in greased 13 x 9 x 2-inch pan.

    Pour tomato sauce over shells.

    Sprinkle with Mozzarella.

    Cover and cook at 350° until hot and bubbly, about 25 minutes.
