Stuffed Peppers

  • 3 to 5 green bell peppers
  • 1/2 c. chopped onion (optional)
  • 1 can tomato soup
  • 1/2 c. rice (instant)
  • 1/3 c. vinegar
  • 1/3 c. brown sugar
  • 1 lb. hamburger
  • salt (to taste)

Directions

    Prepare rice. Set aside.

    Cut peppers lengthwise into halves. Clean out seeds and pulp.

    Cook in boiling water 5 minutes. Cook hamburger and onion until slightly brown.

    Drain off oil. Add rice and half can tomato soup.

    Mix well.

    Pack mixture firmly into pepper halves.

    Place in foil lined baking pan.

    Bring to a boil 1/3 cup vinegar, 1/2 can soup and 1/3 cup brown sugar.

    Pour over peppers.

    Cover tightly with foil.

    Bake 30 minutes at 350°.
