Stuffed Sole (Scd)

- 2 small piece of flat sole
- 1 handful Baby Spinach, chopped
- 14 onion, minced fine
- 1 tablespoon oil
- 1 tablespoon almond flour
- 1 tomatoes, cut in small pieces
- salt and pepper
- 1 little dried basil
- optional a tablespoon scd mayonnaise
Directions

1Pre heat oven to 350F.

2Heat small skillet and add oil.

3Saute onion until transparent.

4Add spinach.

5Cook until it is just wilted.

6Add almond flour and cook, stirring until slightly browned.

7Lay one piece of the sole on a large piece of foil, large enough to enclose the sole.

8Add the stuffing and top with the other piece of sole.

9( If desired you can stuff each piece and roll tightly in individual pieces of foil) Enclose tightly in the foil.

10Place on a baking pan in the oven for 30 minutes.

1120 minutes into the cooking time, simmer the fresh tomato in a covered saucepan until soft and tender.

12Pour over fish.

13If desired, top with mayonnaise.
