  • 6 medium yellow squash
  • 1 lb. ground beef, seasoned to taste
  • 1 small bell pepper, chopped
  • 1 small onion, chopped
  • 1 to 2 Tbsp. tomato sauce
  • 1 tsp. Accent
  • 1 c. grated Cheddar or Velveeta cheese slices

Directions

    Wash and cut squash in half lengthwise.

    Cook in salted water just until tender; drain.

    Scrape out pulp, leaving a shell.

    Save pulp.

    Brown meat; add bell pepper, onion, tomato sauce and Accent.

    Cook until meat changes color.

    Add pulp; mix well. Spoon meat mixture inside squash shells.

    Place squash in baking dish.

    Cover; bake 15 minutes at 350°.

    Uncover; top with grated cheese.

    Return to oven until cheese melts.
