Sweet Potato Pie

  • 3 to 4 large sweet potatoes (about 2 1/4 lb.)
  • 1/2 c. butter, softened
  • 2 c. sugar
  • 4 eggs
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 (13 oz.) can Pet milk
  • 3 (9-inch) frozen regular pie crusts or 2 deep dish pie crusts

Directions

    Cook sweet potatoes in boiling water until fork easily pierces potatoes.

    Cool slightly.

    Remove skins.

    Place cooked and peeled potatoes in large mixing bowl.

    Mix with mixer until smooth.

    There should be about 3 1/2 cups mashed potatoes.

    Stir in butter and sugar.

    Beat in eggs, one at a time.

    Mix in nutmeg, salt and Pet milk.

    Pour into unbaked pie crusts.

    Place on cookie sheet.

    Bake in 425° oven for 20 minutes.

    Lower heat to 325°.

    Bake 30 to 45 minutes longer or until inserted knife comes out clean.
