  • 4 cups fresh parsley
  • 14 cup of fresh mint
  • 2 cups cucumbers, diced and seeded
  • 2 cups tomatoes, diced and seeded
  • 1 cup bulgur, uncooked
  • 34 cup onion, diced
  • 13 cup lemon juice
  • 2 tablespoons olive oil
  • 12 teaspoon salt
  • 1 clove garlic, minced

    Place parsley and mint in a food processor; process until finely minced.

    Combine parsley mixture, cucumber, and remaining ingredients in a large bowl; toss well.
