- 1 cup bulgur, uncooked
- 34 cup onion, diced
- 13 cup lemon juice
- 2 tablespoons olive oil
- 12 teaspoon salt
- 1 clove garlic, minced
Directions

1Place parsley and mint in a food processor; process until finely minced.

2Combine parsley mixture, cucumber, and remaining ingredients in a large bowl; toss well.

3Cover and marinate in refrigerator at least 4 hours.
