- beans
- 1 to 2 Tbsp. salt
- 2 qt. fresh water
- ham hocks or ham
- 1 large chopped onion
- 1 (No. 2) can tomatoes
- 1 tsp. chili powder
- juice of 1 lemon
- salt and pepper to taste
Directions

1Hash beans.

2Place beans in large kettle and cover with water to 2 inches deep.

3Add salt.

4Soak overnight.

5Drain next day and add 2 quarts of fresh water.

6Add ham hocks or ham.

7Bring to a boil and simmer slowly for 3 hours.

8Add onion and tomatoes. Season with chili powder, lemon, salt and pepper.

9Remove ham meat from bone and return to soup.

10Simmer slowly for 1 hour or more. Serve with salad and crackers.
