  • 1 can vegetarian refried beans
  • 1 can black beans, rinsed and drained
  • 1 16 oz. container sour cream
  • 1 package favorite taco seasoning mix
  • 8 oz. shredded sharp cheddar cheese
  • 1/4 cup ea: sliced black olives, thinly sliced scallions, chopped tomato, and chopped cilantro
  • Blue corn and yellow corn tortilla chips for dipping.

    In small bowl toss together the vegetables and cilantro. In second small bowl stir together the sour cream and seasoning mix. Begin layering - I use a pie plate - start with the refried beans, spread evenly, then add the rest in the following order: black beans, sour cream mixture, cheese, and end with the vegetable/cilantro combination. Serve with the tortilla chips.
