Ingredients

  • 1 large onion, finely chopped
  • 1 garlic clove, minced
  • 3 Tbsp. bacon drippings
  • 2 (10 oz.) pkg. frozen limas
  • 1 (1 lb.) can tomato style baked beans
  • 1 (1 lb.) can red kidney beans
  • 1/2 c. chopped celery
  • 1/2 c. ketchup
  • 1/4 c. water
  • 3 Tbsp. vinegar
  • 1 Tbsp. brown sugar
  • 1 1/2 tsp. dry mustard
  • 1 tsp. salt
  • 1 1/4 tsp. pepper
  • 1 1/2 c. shredded Provolone or Monterey Jack cheese

Directions

    Saute onion and garlic in bacon drippings.

    Cook limas and drain.

    Add to onion.

    Add remaining ingredients, including 1/2 the cheese.

    Heat, then turn into 2-quart casserole.

    Sprinkle remainder of cheese on top.

    Bake for 30 minutes at 350°.
