- 3 beaten eggs
- 1/2 c. cooking oil
- 1/2 c. milk
- 2 1/2 c. sifted all-purpose flour
- 1 c. sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 2 c. shredded carrots
- 1 (3 1/2 oz.) can flaked coconut
- 1/2 c. snipped maraschino cherries
- 1/2 c. raisins
- 1/2 c. chopped pecans
Directions

1Combine beaten eggs, oil and milk.

2In large bowl, sift the dry ingredients together (flour, sugar, baking powder, baking soda, salt and cinnamon).

3Add the egg mixture; mix just until thoroughly combined.

4Stir in carrots, coconut, cherries, raisins and pecans.

5Have four 16-ounce fruit or vegetable cans washed, well-greased and floured.

6Pour mixture into these cans and bake in a 350° oven for 45 to 50 minutes.

7Remove from cans; cool thoroughly.

8Wrap and refrigerate overnight or until ready to use. Slice.
